Every foodie knows Enrique Olvera—Mexico’s most celebrated chef who rose to fame with his acclaimed Pujol, in Mexico City, and Cosme, in NYC. At his seafood-focused restaurant at The Cape, a Thompson Hotel, Olvera and his team whip up Mexican favorites with a Peruvian or Japanese twist (scallop tostado with black garlic, avocado; charred mayo and black miso fish tacos). The setting is just as impressive, with floor-to-ceiling windows framing Pacific Ocean views, leather and wood accents, and an open kitchen.

El Farallon at Waldorf Astoria Los Cabos Pedregal

Built into a cliff on the water’s edge, El Farallon gets our vote for the most dramatic setting in all of Cabo. Equally as attention grabbing is the seafood-heavy menu, which features locally caught fish like yellowtail, parrot fish, spiny lobster, chocolate clams, and sea bass. All entrees come with a sampling of the day’s three appetizers—sea bass ceviche, heirloom tomato salad topped with panela cheese, and crab and chipotle soup being just a few options on the menu — and the speciality cocktails (try the guava and lychee margarita) are inspired by local flavors and ingredients. Save room for Mexican doughnuts for dessert.

Flora's Field Kitchen

Built in 1996, this 25-acre farm in the foothills of the Sierra de la Laguna Mountains has become a leader in the region for organic, sustainable farming. In 2010, the pretty, open-air Flora Field Kitchen and Farm Bar followed, where the fruits of the farm are served for lunch and dinner and crafted into creative cocktails like the “Farmarita,” their version of a margarita made with heirloom carrot juice and Cazadores Reposado tequila. Go on a Sunday for an à la carte brunch with dishes like herb scrambled farm eggs and lemon ricotta pancakes. There’s also a small grocery where visitor’s can purchase freshly baked bread and produce.

La Roca at Grand Solmar Land’s End 

Ocean views, stellar service, inventive cuisine, and extensive wine selection all come together to make La Roca one of the most romantic spots in Cabo. Executive Chef Hector Lucas serves up distinctive Baja flavors like seaweed seared tuna with rice noodles and fish broth and crispy rolled shrimp tacos with pineapple relish and breaded tomato. To really set the mood, secure a reservation on the patio at sunset. A mariachi band might just stop by your table to serenade you and your lover.

Acre Baja

One of the newest farm-to-table concepts in Cabo, Acre Baja is a more contemporary version of Flora’s Farm, with a design-forward space and an inventive food and cocktail program. All the menu items are prepared using ingredients grown on the surrounding 25 acres of organic farmland, and the rustic décor (twig pendant lights, handmade blue-and-white tiles, a lattice roof) is made by local artisans. As for the eats, expect comfort-driven classics (whole roasted hen with pickled radish and soy jalapeno) and creative, Asian-inflected fare (crudo ceviche with lemongrass ice, fried chicken skin, and kaffir lime)—plus a cocktail menu designed by Danielle Tatarin, who owns the popular Keefer Bar in Vancouver. We'd recommend the Paloma Damiana, a tequila-based cocktail with grapefruit, damiana tonic, and salt.

Los Tres Gallos 

This traditional Mexican restaurant is set in hacienda-style courtyard surrounded by fruit trees and twinkling lights. Adding to its old-school charm are the traditional Mexican dishes (think: hand-rolled tortillas, chile rellenos, house-made salsas and mouth-watering mole) that come out of its beautifully tiled open kitchen. The best part? It’s super affordable, with most menu items priced less than $25.

Los Tamarindos

Chef Enrique Silva put his love of agriculture and sustainable farming to work when he bought this 1888 ranch house outside San José and turned it into one of Cabo’s biggest working farms. Today, more than a hundred varieties of organic vegetables are grown at Los Tamarindos, which hosts immersive cooking classes for anyone interested in getting their hands dirty. Four-hour sessions begin with a taste of chilled lemongrass tea and a tour of the gardens and end in the open kitchen. As the sun sets, all are invited to sit at a communal table beneath the stone eaves of the open veranda and dine on the fruits of their labor: family-style dishes like mint ceviche, chicken with green mole, and stuffed zucchini blossom with mango ate and ricotta cheese. It's worth flying here just for the experience.

Edith’s 

Edith’s may be a block away from tourist-heavy Medano Beach, but the intimate vibe and traditional décor make it feel like a locals-only haunt. Crowdpleasers include the Wally Special with grilled lobster, garlic shrimp, and mesquite grilled catch of the day, and the Aztec Soup, a traditional tortilla soup with roast dried guajillo peppers.
