The organic farm is the cornerstone of the entire resort experience and the source of many of the dining rooms’ ingredients. You’ll receive fresh fruit to your front door and may chat with the chef at The Farm while he makes your braised-chicken roulade and roasted carrots, dine in the Great House’s restaurant on the catch of the day, or feast on bouillabaisse or ceviche that was made with fish you caught yourself, just that afternoon.Mill Bar pays tribute to St. Kitts’ cane-milling origins, but it’s not sugar and rum that are the focus here – rather, you’ll sip on elixirs and extracts of, again, the on-site herbs and fruits. In certain seasons, sea-to-fork fare will also be served at the black-sand Dieppe Bay beach, 10 minutes away.
Mango Walk is Belle Mont’s gorgeous spa, in an ancient mango grove at the peak of Kittitian Hill. You’ll come here to soak in natural pools and receive therapies that were inspired by indigenous traditions, and whose products and concepts the staff will happily share afterward.
