The house restaurant, Restaurant La Quintessence, is one of only 25 AAA 4-Diamond restaurants in Quebec; it focuses on regional specialties and organic herbs plucked from the chef's personal garden. If you'd rather just have a glass of vino, try the less formal wine bar. It has a good selection of wines by the glass, plus a lengthy port and scotch list. Guests can also ask the sommelier for a tour the impressive 60-foot-long exposed wine cellar, which boasts nearly 4,000 bottles, and to sample a few house favorites in the adjacent tasting room.
